“What do you do in winter?”
It’s a question we’re often asked during the summer months!
Because it’s not all cows and cheese in the Beaufortain, we’re also breeding snails in Beaufortain with Snails of La Stâla, a helicicultural farm. In winter we prepare and market the snails we’ve raised in our snail farm from May to October in Beaufort, Savoie. These are the same snails we serve at lunchtime in the refuge! So, if you didn’t get a chance to taste them during the summer, or if the next season seems too far away, don’t worry, you’ll find all the information you need here to stock up and enjoy our preparations all year round from the comfort of your own home.
Fresh prepared meals
All you have to do is heat them up in the oven!

Coquilles

A traditional product par excellence, our Burgundy-style snails in shells will be the perfect addition to your entrées.
Preparation: Reheat in a hot oven for approx. 7 minutes, until the butter shivers.

Croquilles

The croquille is a light wafer that holds the snail and parsley butter together. You can eat the whole thing as a small appetizer.

Puff pastry

Pure butter puff pastry bites filled with a snail and a traditional butter filling.
Preparation: Reheat in a hot oven for approx. 7 minutes, until the butter shivers.
